Here’s a classic Chicken Tikka recipe — flavorful, smoky, and perfect for grilling or baking:

Ingredients

For Marination:

  • 500g boneless chicken (preferably thigh or breast), cut into cubes
  • 1 cup thick yogurt (hung curd works best)
  • 1 tbsp ginger-garlic paste
  • 1½ tsp red chili powder (adjust to spice preference)
  • ½ tsp turmeric powder
  • 1 tsp garam masala
  • 1 tsp coriander powder
  • 1 tbsp lemon juice
  • 1 tbsp mustard oil (or any oil)
  • Salt to taste
  • Optional: red/orange food color (for authentic tandoori look)

For Grilling:

  • 1 tbsp oil or butter (for basting)
  • Onion rings, lemon wedges, and green chutney (for serving)

Instructions

1. Marinate the Chicken

  • In a large bowl, mix yogurt, ginger-garlic paste, spices, lemon juice, oil, and salt.
  • Add chicken pieces and coat well.
  • Cover and refrigerate for at least 2 hours, preferably overnight.

2. Cooking Methods

Option A: Grill/Oven

  • Preheat oven to 220°C (430°F).
  • Thread chicken pieces onto skewers (metal or soaked bamboo).
  • Place on a wire rack or baking tray.
  • Bake for 20–25 minutes, turning once halfway. Baste with oil/butter.
  • For a smoky flavor, broil for the last 3–5 minutes or char over an open flame.

Option B: Pan Fry

  • Heat oil in a non-stick pan.
  • Cook chicken in batches until charred and cooked through (~6–8 min per side).

Option C: Air Fryer

  • Air fry at 200°C (390°F) for 15–20 min, flipping and basting halfway.

Serve With

  • Mint chutney
  • Onion slices & lemon wedges
  • Butter naan or roomali roti
